Lemon Garlic Shrimp Skewers

Ingredients:

  1. 2 lbs of large shrimp, peeled and deveined
  2. 4 cloves garlic, minced
  3. 1 lemon, zested and juiced
  4. 2 tablespoons of olive oil
  5. Salt and pepper to taste
  6. Freshly chopped parsley for garnish
  7. Wooden or metal skewers

Instructions:

  1. In a large bowl, whisk together olive oil, garlic, lemon zest, lemon juice, salt, and pepper. Add the shrimp and toss to coat. Marinate in the refrigerator for 15-30 minutes, but not much longer, as the acid from the lemon can start to cook the shrimp.
  2. If using wooden skewers, soak them in water for at least 20 minutes before grilling to prevent burning.
  3. Preheat your grill to medium-high heat.
  4. Thread the shrimp onto the skewers. Grill for 2-3 minutes per side or until the shrimp are opaque.
  5. Garnish with freshly chopped parsley and serve immediately.

Honey-Soy Glazed Salmon Fillets

Ingredients:

  1. 4 salmon fillets
  2. 1/4 cup of honey
  3. 1/4 cup of soy sauce
  4. 2 cloves garlic, minced
  5. 1 tablespoon of grated fresh ginger
  6. Sesame seeds and sliced green onions for garnish

Instructions:

  1. In a bowl, whisk together honey, soy sauce, garlic, and ginger. Set aside some of the glaze for serving.
  2. Place salmon fillets in a dish and pour the glaze over them. Marinate for 15-30 minutes.
  3. Preheat your grill to medium heat.
  4. Grill the salmon for about 4-5 minutes per side, basting occasionally with the glaze.
  5. Salmon is done when it flakes easily with a fork. Garnish with sesame seeds and green onions and serve with reserved glaze.

Grilling Tips for Seafood:

  1. Prevent Sticking: Make sure your grill grates are clean and oil them lightly before grilling your seafood to prevent sticking.
  2. Don't Overcook: Seafood cooks quickly. Keep a close eye on your grill to avoid overcooking, which can make your seafood dry and tough.
  3. Use a Grill Basket: Smaller seafood pieces might fall through the grates. Consider using a grill basket for easy flipping and to prevent loss.
