Classic BBQ Chicken

Ingredients:

  1. 4 bone-in chicken thighs and 4 drumsticks
  2. Salt and pepper to taste
  3. 1 cup of your favorite BBQ sauce

Instructions:

  1. Preheat your grill to medium heat.
  2. Season the chicken pieces with salt and pepper.
  3. Place the chicken on the grill, skin side down. Grill for about 5-7 minutes or until the skin is nicely browned and releases easily from the grill.
  4. Turn the chicken pieces over and grill for another 5-7 minutes.
  5. Reduce the heat to low and generously brush the chicken with BBQ sauce. Continue to grill, turning and basting occasionally, for another 15-20 minutes or until the internal temperature reaches 165 degrees Fahrenheit

Sweet and Tangy Pineapple Chicken Skewers

Ingredients:

  1. 2 boneless, skinless chicken breasts, cut into chunks
  2. 1 cup of pineapple chunks
  3. 1 bell pepper, cut into chunks
  4. 1 red onion, cut into chunks
  5. Salt and pepper to taste
  6. Wooden or metal skewers

For the Glaze:

  1. 1/2 cup of BBQ sauce
  2. 1/4 cup of pineapple juice
  3. 1 tablespoon of honey
  4. 1 tablespoon of soy sauce

Instructions:

  1. If using wooden skewers, soak them in water for at least 20 minutes to prevent burning.
  2. Preheat your grill to medium heat.
  3. Thread the chicken, pineapple, bell pepper, and red onion onto the skewers. Season with salt and pepper.
  4. In a small bowl, whisk together the BBQ sauce, pineapple juice, honey, and soy sauce to make the glaze.
  5. Grill the skewers for about 3-4 minutes per side, basting with the glaze, until the chicken is cooked through and the vegetables are tender.

Grilling Tips for BBQ Chicken:

  1. Avoid Flare-Ups: Trim excess fat from chicken pieces to prevent flare-ups while grilling. If flare-ups occur, move the chicken away from the flames until they subside.
  2. Don't Rush the BBQ Sauce: Wait until the last 15-20 minutes of grilling to apply BBQ sauce. Because most BBQ sauces are sugar-based, they can burn if applied too early.
  3. Check the Temperature: Chicken is safely cooked when it reaches an internal temperature of 165 degrees Fahrenheit. Using a meat thermometer will ensure your chicken is cooked to the correct temperature.

With these recipes and tips, your Memorial Day celebration will be filled with succulent, BBQ chicken that's cooked to perfection. Fire up the grill and enjoy the long weekend with some finger-licking good chicken!
