What's a Memorial Day cookout without the grandeur of a perfectly grilled steak? As we progress in our grilling series, we're turning up the heat to sizzle some steaks. With a range of cuts and countless ways to season them, steaks offer something for everyone. This article will guide you on how to grill a Classic Ribeye Steak and a unique Grilled Flank Steak with Chimichurri Sauce.

Classic Ribeye Steak

Ingredients:

  1. 2 ribeye steaks, about 1.5 inches thick
  2. Salt and pepper to taste
  3. 2 tablespoons of olive oil
  4. 2 cloves of garlic
  5. Few sprigs of fresh thyme

Instructions:

  1. Allow the steaks to come to room temperature before grilling, approximately 30 minutes.
  2. Preheat your grill to high heat.
  3. Season the steaks generously with salt and pepper, then rub them with olive oil.
  4. Place the steaks on the grill and cook for about 4-5 minutes on each side for medium-rare, or until desired level of doneness.
  5. In the last two minutes of grilling, add a clove of garlic and a sprig of thyme on top of each steak.
  6. Let the steaks rest for a few minutes before serving to allow the juices to redistribute.

Grilled Flank Steak with Chimichurri Sauce

Ingredients:

For the Steak:

  1. 1 flank steak, about 1.5 pounds
  2. Salt and pepper to taste

For the Chimichurri Sauce:

  1. 1 cup fresh parsley, finely chopped
  2. 1/2 cup olive oil
  3. 1/3 cup red wine vinegar
  4. 3 cloves garlic, minced
  5. 1 teaspoon crushed red pepper flakes
  6. Salt and pepper to taste

Instructions:

  1. To make the chimichurri sauce, combine parsley, olive oil, red wine vinegar, garlic, red pepper flakes, salt, and pepper in a bowl. Set aside.
  2. Preheat your grill to high heat.
  3. Season the flank steak on both sides with salt and pepper.
  4. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired level of doneness.
  5. Let the steak rest for a few minutes, then slice it against the grain. Serve with the chimichurri sauce.
